Glycyrrhizin ammoniated is the dried and ground portion of the licorice root. Ammoniated glycyrrhizin is prepared from the water extract of licorice root by acid precipitation followed by neutralization with dilute ammonia. It can be used as a flavoring agent in food items and vitamin or mineral supplements. Used historically for GI complaints, licorice is also used as a flavoring agent in the tobacco and candy industries and to some extent in the pharmaceutical and beverage industries.
